Where to Buy Authentic Bryci Cookies

- Weekly Drops: Follow @BryciKitchen on Instagram. She drops locations (usually Seattle or Portland) on Friday at 9 AM. They sell out in 4 minutes.
- Copycat Bakeries: Numerous bakeries (Levain-style knockoffs) are using the keyword "Bryci" to describe any crispy/chewy hybrid. Be warned: a true Bryci must have the smashed appearance.
- The Deep Freeze Delivery: Several artisanal shipping services now offer frozen Bryci dough pucks shipped with dry ice.
A simple Bryci-style cookie recipe (yields ~18)
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 3/4 cup unsalted butter, browned and cooled
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 1 1/2–2 cups mix-ins (chocolate chunks, toffee, nuts)
Quick method:
- Whisk flour, baking soda, and salt.
- Beat browned butter with both sugars until combined. Add eggs one at a time, then vanilla.
- Fold in dry ingredients, then stir in mix-ins. Chill dough 30–60 minutes for firmer shape.
- Scoop 2-tablespoon portions onto a lined tray, bake at 350°F (175°C) for 10–12 minutes until edges are set but centers still soft. Cool on the tray 5 minutes.
